José Tomás Arribas built his career in Valencia’s restaurant scene: Q’Tomas, Barrafina and Hiro. Capo Tobella spent more than 18 years alongside Quique Dacosta. When they decided to open in Madrid, there was no need to invent anything: bring the product and do things properly. We worked on their first project, at Castelló 9, Salamanca.
The menu centres on charcoal grilling and Levante produce: Dénia red prawns, fish, meat and dry rice dishes. MIL Studios designed the interior with green tiles, marble and white tablecloths.
