A hand roll bar in Chamberí that thinks Japanese and eats Spanish. Two complementary rhythms shape the experience: functional lunches during the day and livelier dinners at night, with the bar as the central point for meeting and socialising.
Chef Álvar Fernández achieves a perfect balance between Japanese precision and Mediterranean flavour, while Estudio Plutarco designed a space that changes its energy depending on the time of day. Every detail, from the service sequence to the atmosphere of each area, is designed to make the experience fluid and direct, without losing efficiency or the natural feel of the concept.
